Chicken or Shrimp Broccoli Alfredo
This is one of my favorite weekday meals. I just love an all in one pasta dish. This has your meat, starch, and vegetables. Perfect! It's remarkably simple and super easy. You can even switch up the noodle type if you'd like. Penne pasta is nice because all the sauce goodness gets inside the noodle, yumm. I make enough to last a few days so I won't have to cook every single night. I'm still learning to cook for one, so this recipe will definitely yield leftovers unless you eat like a bear =).
You Will Need:
1 can Alfredo sauce
1/2-3/4 pound of pasta noodles
1/2 pound cubed chicken breast or shrimp
1 cup steamed broccoli
1/2 cup diced mushrooms (or substitute with mushroom Alfredo)
1 tbsp butter
1/4 cup milk
s&p to taste
Put the chopped broccoli in a microwave safe container. Add just enough water to cover, put a lid on the container, but don't close it shut. Cook on high for 3-5 minutes until tender, drain. Bring water to a boil (add a little salt) and cook pasta adente, drain. While the pasta is boiling, melt the butter in a pan and saulte the mushrooms. Toss in the broccoli with the mushrooms, add salt and pepper to taste. Empty the Alfredo in a wok or large pan. Add the milk to the Alfredo jar and shake around to get all the sauce out, add it to the wok and bring to a simmer. Fold in the pasta, broccoli and mushrooms. Let simmer, stirring often, until all contents are thoroughly mixed and warmed through.
