Another simple pasta dish for you guys. I had a couple of tomatoes and some Alfredo sauce and wondered if they would taste good together. Guess what, they do! So I used some angel hair pasta, which I always seem to have on hand, and some dried basil and fresh garlic. Here's how to put it all together:
Simmer a couple of chopped cloves of garlic in a pan until savory (use butter instead of olive oil because oil burns garlic faster). Add the tomatoes and basil to the pan and cook until softened. Fresh basil is always more flavorful, but I only had dried. Add about 1 cup of Alfredo sauce to the pan and 1/2 cup milk. Stir together. Drain your pasta of choice (about 1.5 cups cooked) and stir into the Alfredo mixture. Squeeze a little lime juice on top and it's all done. I tend to cook with lime a lot, you can leave that part out if it's not your forte.
I cooked some asparagus to go along with the pasta using a steam basket (below). Steam baskets are very useful for steaming veggies without losing the flavor. Just use a pot that fits the basket so that you can put the lid back on it. Only fill the pot with water so that it does not touch the holes on the bottom of the stream basket. Bring the water to a boil, add your veggies, and steam for 4-5 minutes.
