Looking for a fast and frugal entrée for tonight? Try this super easy pasta that takes the same amount of time it takes to read this blog! This started out as a "I'm so hungry and I don't have money to get groceries" meal. But it ended up being one of my favorite weekday staples. It's made from items you should normally have in your pantry:
pasta, canned chopped spinach, canned chicken, and Parmesan cheese. I used canned chicken because it's easy, but if you don't like the can taste you can always take an extra 20 minutes to cook up some chicken, but remember, this is suppose to be fun, fast, and frugal! I like to eat it with some fresh roasted veggies like tomatoes, mushrooms, asparagus, squash, or zucchini. Umm umm good! Here's my recipe, but feel free to get creative in the kitchen =)
1/2 cup chopped spinach
1/2 cup chicken (canned or cooked strips)
1/2 cup Parmesan
S&P to taste
Toss all ingredients together, and serve. How easy is that!?
